Patricia was born to Robert and Dorothy Foy on Sept. 17, 1953 in Medford, Ore. Her family settled in Colorado Springs in 1959. Patricia grew up with three sisters, whom she loved dearly.
In 1971, Patricia graduated from St. Mary’s High School in Colorado Springs. She attended the University of Colorado Colorado Springs for one year before working as a nanny in North Carolina. Her return back to Colorado brought her to Giuseppe’s Pizzeria as the Bar Manager in Colorado Springs. She then worked for May-D&F department store from 1974-1985. Patricia married Richard N. Knudsen on Oct. 28, 1979. Together, they had two daughters.
Patricia’s first love was for her family. She also loved to sew, bowl, gamble, travel and meet people. Eventually, Patricia’s love for making things blossomed into her own handmade-craft business, “By Patte,” and with that flourished another business, “Soup for Supper.” Together with her soup partner Barb Gougler, Patricia helped create 10 varieties of homemade soup that they sold online and at Colorado craft shows.
Patricia is survived by her husband; daughters Jennifer Knudsen of Johnstown; daughter Laura Weimer (Kurt) of Johnstown; sisters Jane Foy of Durango; and Kathleen Briggs (Robert) of Saxonburg, Pa.; and three grandchildren, Juliet Knudsen of Thornton; Laura Quinn Weimer of Johnstown; and Wesley Weimer of Johnstown; and a multitude of nieces and nephews.
She is preceded in death by father Robert Foy; mother Dorothy Foy; and sister Marie Foy.
